Spice Up Your Life Cauliflower Chickpea Masala
Ingredients
- ½ teaspoonground cumin
- ½ teaspoonground turmeric
- ½ teaspoonsmoked paprika
- ¼ teaspooncayenne pepper (optional)
- ½ teaspoonsea salt, plus more as needed
- Freshly cracked black pepper
- 1 tablespoonextra virgin olive oil or coconut oil
- 1 mediumonion, chopped
- 3 clovesgarlic, minced
- 1½ teaspoonsgrated fresh ginger or 1 teaspoon ground ginger
- 1 mediumhead cauliflower, cut into small florets
- 1 (15-ounce)can chickpeas, drained
- 1 (15-ounce)can no-sugar-added tomato sauce
- 1 cupvegetable broth or filtered water
- ½ cupcanned unsweetened coconut milk
- ¼ cupfresh cilantro leaves, roughly chopped
- Brown basmati rice and gluten-free naan flatbread for serving
Method
- In a small bowl, combine the cumin, turmeric, paprika, cayenne, salt, and black pepper to taste. This is your masala spice mix!
- In a large, heavy saucepan, heat the olive or coconut oil over medium-high heat. When the oil is shimmering, add the onion, garlic, and ginger and cook over medium heat until the onion is softened, about 5 minutes. Stir in the spice mix and continue to cook for another minute.
- Add the cauliflower to the pan and continue to cook until it begins to soften, about 10 minutes. Add a splash of water if needed if the spices are starting to burn.
- Add the chickpeas, tomato sauce, and vegetable broth or water and stir to combine. Simmer over medium-low heat for 10 minutes. Add the coconut milk and stir to combine. Add more salt if needed. Stir in the cilantro.
- Serve with a bowl of basmati rice and some flatbread.
