Salted Coconut Caramel Sauce
Ingredients
- 2 cupspacked coconut sugar
- 2 cupsfull-fat canned unsweetened coconut milk
- ½ teaspoonsea salt
Method
- Combine all the ingredients in a medium saucepan. Place over medium heat and cook, stirring constantly, as the mixture comes to a boil and the sauce reduces and takes on a thick consistency, 35 to 45 minutes.
- Test the consistency of the caramel by spooning a few drops from your saucepan into a cup of ice-cold water once you're around the 35-minute mark. If soft balls form when you pick up the caramel and drop it between your fingers, you know the caramel is done. If it is not done, try again after boiling for another 3 to 5 minutes.
- Pour the caramel sauce into a glass jar, cool completely, cover, and store in the fridge for up to 1 week.
Notes
This insanely delicious vegan caramel sauce is great for drizzling on smoothie bowls, on vegan ice cream, or on fresh fruit. Isn't it amazing what you do with coconuts?
